Small pastry with pumpikin and cinnamon jam
For the jam:
1 kg of pumpkin
3 organic lemon (peel and juice)
1 cinnamon stick
350g of sugar
1 small cup of water.
Cut the pumpkin into cubes and cook in a double boiler with the zest and juice of the lemons. As soon as it is cooked, blend it, add a cup of water and cook over a very low flame. Add the sugar, the cinnamon stick and let it thicken.

For the shortcrust pastry
500g of flour
250g of sugar
3 egg yolks
2 eggs
300g of butter or margarine
Lemon zest
Work the butter with the sugar and lemon zest in a kneading machine until it is creamy. Add the eggs and yolks and continue to work until everything is well blended. Add the flour by sifting and then complete the work with your hands. Wrap it in plastic wrap and put it in the fridge for about 1 hour.
Once the time has elapsed, roll out the pastry and form the biscuits with a pastry cup, fill them with the jam prepared earlier, and bake in a preheated oven at 170 ° for about 15 minutes.
Let cool and serve with a warm tea or after dinner with Malvasia wine.
